  • 1 lb beef sirloin or filet, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tsp Dijon mustard
  • 1/2 cup beef broth
  • 1/2 cup heavy cream or sour cream
  • 1 tsp Worcestershire sauce
  • Salt & black pepper, to taste
  • Fresh parsley for garnish

Instructions

1️⃣ Sear the Beef – Heat olive oil in a pan over high heat. Quickly sear the beef strips for 1-2 minutes per side. Remove and set aside.
2️⃣ Sauté the Veggies – In the same pan, melt butter and sauté onions, garlic, and mushrooms until softened.
3️⃣ Make the Sauce – Stir in Dijon mustard, Worcestershire sauce, and beef broth. Let it simmer for 3-4 minutes to reduce.
4️⃣ Add the Cream – Lower the heat and mix in sour cream or heavy cream. Stir until smooth, then return the beef to the pan.
5️⃣ Serve & Enjoy – Garnish with fresh parsley and serve over buttered noodles or rice!

Notes

For extra depth, add a splash of brandy or white wine when sautéing the mushrooms.
Don’t overcook the beef – it should be tender and juicy!
Best served fresh, but leftovers keep well for up to 2 days
