2 lbs of Yukon Gold potatoes
1 cup unsalted butter
1 cup whole milk
Salt, to taste

Instructions
Start by peeling the Yukon Gold potatoes and cutting them into evenly-sized chunks, about 1-2 inches wide.
Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt and boil, then reduce to a simmer and cook for 15-20 minutes until fork-tender.
Drain the potatoes in a colander and let them steam for a few minutes.
