4 boneless, skinless chicken breasts
1 cup fresh mushrooms, diced
1 cup gouda cheese, shredded
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
1/2 cup spinach, chopped
Toothpicks or kitchen twine for securing the chicken
Preheat your oven to 375°F (190°C).
In a skillet over medium heat, add olive oil. Once it shimmers, add diced mushrooms and minced garlic. Sauté for 5 minutes until tender.
