Delicious and healthy Greek Chicken Bowls marinated in a zesty blend of flavors and served with fresh vegetables, rice or quinoa, and a creamy tzatziki sauce.
Ingredients
4 small chicken breasts (about 1 1/4 pounds)
1/4 cup olive oil
1 tablespoon lemon zest
2 tablespoons lemon juice
2 tablespoons honey
1 teaspoon garlic powder
1 1/2 teaspoons dried oregano
1 1/2 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes
2 cups cooked rice or quinoa
2 cups halved grape or cherry tomatoes
2 cups diced or chopped cucumber
4 cups shredded romaine lettuce
1 cup sliced red onion
1/2 cup feta
1 cup plain Greek yogurt
1/2 cup grated cucumber
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon minced garlic
1/4 teaspoon salt (or to taste)
1 tablespoon fresh chopped dill
2 tablespoons fresh parsley
finely chopped
Instructions
- In a bowl, combine olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes to make the marinade.
- Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.
- Preheat the oven to 400°F (200°C). Remove chicken from the marinade and place on a baking sheet.
- Bake chicken for 25-30 minutes or until fully cooked. Let it rest for a few minutes before slicing.
- While chicken is baking, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill in a bowl.
- To assemble the bowls, divide rice or quinoa among four bowls, then layer with shredded romaine, tomatoes, cucumber, red onion, sliced chicken, and feta.
- Drizzle with tzatziki sauce and garnish with fresh parsley before serving.
Notes
You can customize the veggies in the bowl based on your preference. The yogurt sauce can be made a day ahead for richer flavor.
