Ingredients
– 4 boneless, skinless chicken breasts – 2 tbsp olive oil – 1 tbsp lemon juice – 2 tsp dried oregano – 2 cloves garlic, minced – Salt and pepper to taste – 2 cups cooked rice – 1 cup diced cucumber – 1 cup cherry tomatoes, halved – 1/2 cup sliced red onion – 1/2 cup crumbled feta cheese – 1/2 cup tzatziki sauce – Fresh parsley for garnish
Instructions
In a bowl, combine olive oil, lemon juice, oregano, garlic, salt, and pepper. Marinate chicken breasts in the mixture for at least 30 minutes. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side until cooked through. Slice chicken into strips. Assemble bowls with rice, chicken, cucumber, tomatoes, red onion, and feta. Top with tzatziki sauce and garnish with parsley. Serve immediately.
Notes
For extra flavor, marinate chicken overnight. Use quinoa or couscous instead of rice for variation. Add olives or roasted peppers for more Mediterranean flair.
