2 tablespoons fresh dill

Instructions

  • In a large bowl, combine ground chicken, egg, breadcrumbs, crumbled feta, parsley, oregano, minced garlic, lemon zest, salt, and pepper. Mix until just combined.
  • Preheat a skillet over medium heat and add olive oil. Form the mixture into meatballs and cook until browned and cooked through, about 8-10 minutes.
  • While meatballs are cooking, prepare the lemon orzo. In a saucepan, bring chicken broth to a boil and add orzo. Cook according to package instructions until al dente.
