- 2 chicken breasts, cubed
- 1 cup orzo pasta, uncooked
- 1/2 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt & pepper to taste
Instructions
- Preheat Oven: Preheat oven to 190°C (375°F).
- Sear the Chicken: In a pan, heat olive oil over medium-high heat. Season chicken with salt, pepper, oregano, and thyme. Cook chicken until golden, about 5-7 minutes.
- Prepare the Bake: In a baking dish, combine cooked chicken, orzo, garlic, olives, tomatoes, and red onion. Stir in chicken broth, lemon juice, and Greek yogurt.
- Bake: Cover with foil and bake for 20-25 minutes until orzo is tender. Remove foil, sprinkle with feta cheese, and bake for an additional 5-10 minutes until bubbly.
- Serve & Enjoy: Garnish with fresh parsley and serve!

- For extra creaminess, add a bit more Greek yogurt or a splash of heavy cream.
