  • 2 chicken breasts, cubed
  • 1 cup orzo pasta, uncooked
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt & pepper to taste

Instructions

  • Preheat Oven: Preheat oven to 190°C (375°F).
  • Sear the Chicken: In a pan, heat olive oil over medium-high heat. Season chicken with salt, pepper, oregano, and thyme. Cook chicken until golden, about 5-7 minutes.
  • Prepare the Bake: In a baking dish, combine cooked chicken, orzo, garlic, olives, tomatoes, and red onion. Stir in chicken broth, lemon juice, and Greek yogurt.
  • Bake: Cover with foil and bake for 20-25 minutes until orzo is tender. Remove foil, sprinkle with feta cheese, and bake for an additional 5-10 minutes until bubbly.
  • Serve & Enjoy: Garnish with fresh parsley and serve!
