Description
This Grilled Balsamic Steak Salad combines juicy grilled steak, tangy balsamic dressing, creamy Gorgonzola cheese, and sweet corn for a fresh, flavorful meal.
Ingredients
1 lb flank steak or sirloin
2 cups fresh corn kernels (about 2 ears)
4 cups mixed salad greens
1/2 cup crumbled Gorgonzola cheese
1/4 cup red onion, thinly sliced
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 tablespoon Dijon mustard
1 teaspoon honey
Salt and pepper to taste
Optional: cherry tomatoes, toasted walnuts
Instructions
1. Preheat grill to medium-high heat.
2. Season steak with salt and pepper.
3. Grill steak for 4-5 minutes per side or until desired doneness.
4. Let steak rest 5 minutes, then slice thinly against the grain.
5. Meanwhile, grill corn kernels in a grill pan or skillet until lightly charred.
6. In a small bowl, whisk balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper to make dressing.
7. Toss salad greens with dressing.
8. Arrange greens on a platter, top with steak slices, grilled corn, red onion, and Gorgonzola.
9. Add optional cherry tomatoes and walnuts if desired.
10. Serve immediately.
Notes
Use pre-cooked or leftover steak to save time.
Substitute blue cheese for Gorgonzola if preferred.
Add avocado slices for extra creaminess.
