  • 1 cup croutons (store-bought or homemade)

For the Dressing:

  • ¼ cup mayonnaise or Greek yogurt

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • 1 tbsp grated Parmesan cheese

  • Salt & pepper to taste

  • Optional: ½ tsp anchovy paste for classic flavor


Instructions

  1. Grill the chicken: Preheat the grill to medium-high. Brush chicken with olive oil and season with salt, pepper, and garlic powder. Grill for 6–7 minutes per side until fully cooked. Let rest, then slice.

  2. Make the dressing: In a small bowl, whisk together all dressing ingredients until smooth.

  3. Assemble the salad: In a large bowl, toss romaine with dressing. Top with grilled chicken, Parmesan, and croutons.

  4. Serve: Enjoy immediately, garnished with extra cheese and fresh black pepper.
