Ingredients
For the Salad:

2 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and black pepper, to taste

1 tsp garlic powder

1 large head romaine lettuce, chopped

½ cup shaved or shredded Parmesan cheese

1 cup croutons (store-bought or homemade)
For the Dressing:

¼ cup mayonnaise or Greek yogurt

1 tbsp lemon juice

1 tsp Dijon mustard

1 garlic clove, minced

1 tbsp grated Parmesan cheese

Salt & pepper to taste

Optional: ½ tsp anchovy paste for classic flavor
Instructions

Grill the chicken: Preheat the grill to medium-high. Brush chicken with olive oil and season with salt, pepper, and garlic powder. Grill for 6–7 minutes per side until fully cooked. Let rest, then slice.

Make the dressing: In a small bowl, whisk together all dressing ingredients until smooth.

Assemble the salad: In a large bowl, toss romaine with dressing. Top with grilled chicken, Parmesan, and croutons.
