2 sandwich rolls (brioche

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/4 cup mixed greens or lettuce

1/4 cup sliced tomato

1/4 cup sliced red onion (optional)

2 slices cooked bacon (optional)

Olive oil or cooking spray

Instructions

  • In a bowl, combine olive oil, lemon juice, minced garlic, Dijon mustard, oregano, thyme, red pepper flakes, salt, and pepper to create the marinade.
  • Add chicken breasts to the marinade and let them sit for at least 30 minutes, or refrigerate for a few hours for better flavor.
  • Preheat your grill or grill pan over medium-high heat and lightly oil the grill grates.
  • Grill the marinated chicken breasts for about 6-7 minutes per side or until fully cooked and the internal temperature reaches 165°F (75°C).
  • During the last minute of grilling, add the cheese slices on top of the chicken to melt.
