Ingredients
Halloumi Cheese: 1 block (8–10 ounces)
cut into 1-inch cubes
Lemon: 1
cut into thin slices or wedges
Red Onion: 1 medium
cut into chunks (optional)
Cherry Tomatoes: 1 cup
for added flavor and color
Olive Oil: 3 tablespoons
Lemon Juice: 2 tablespoons
freshly squeezed
Fresh Thyme: 1 tablespoon
finely chopped (or 1 teaspoon dried thyme)
Garlic: 2 cloves
minced
Honey: 1 teaspoon
for a touch of sweetness
Salt and Pepper: To taste
Fresh Thyme Sprigs: For decoration
Crushed Red Pepper Flakes: For a spicy kick
Instructions
- In a bowl, mix together the olive oil, lemon juice, chopped thyme, minced garlic, honey, salt, and pepper to create the marinade.
- Add the cubed halloumi, lemon slices, red onion chunks, and cherry tomatoes to the marinade. Toss gently to coat and let it marinate for at least 15 minutes.
- Preheat the grill to medium heat and soak skewers in water for 10 minutes if using wooden ones.
- Thread the marinated halloumi, lemon, onion, and cherry tomatoes onto the skewers, alternating between each ingredient.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the halloumi is golden and slightly charred.
- Remove from the grill, garnish with fresh thyme sprigs and crushed red pepper flakes if desired. Serve warm.
Notes
For best results, marinate the skewers for at least 30 minutes. Serve with a fresh salad or pita bread.
