Deliciously zesty Grilled Lemon Salmon Skewers infused with a spice blend, perfect for a summer barbecue.

2 Pounds Salmon skin removed and cut into large chunks
⅓ Cup Extra Virgin Olive Oil
1 Lemon zested and juiced
1 Tablespoon Cumin
2 Teaspoons Paprika
½ Teaspoon Chili Powder
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Kosher Salt
½ Teaspoon Ground Black Pepper
2 Red Onions cubed
3 Lemons sliced 1/2 inch thick
Fresh Parsley chopped
Lemon Wedges
Instructions
- In a bowl, whisk together olive oil, lemon zest, lemon juice, and all the spices to create the marinade.
- Add the salmon chunks to the marinade and let it sit for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated salmon, red onion cubes, and lemon slices onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the salmon is cooked through.
- Remove from the grill, garnish with fresh parsley and lemon wedges, and serve immediately.
Notes
Soaking the wooden skewers in water for 30 minutes before grilling can prevent them from burning.
