Ingredients

  • 2 ripe nectarines, halved and pitted

  • 1 tbsp olive oil

  • 4 cups arugula or mixed greens

  • 1 ball burrata cheese (about 4 oz)

  • 4 slices prosciutto

  • 1 tbsp balsamic glaze

  • Fresh basil leaves (optional)

  • Salt and pepper, to taste


Instructions

  • Grill Nectarines: Brush nectarine halves with olive oil. Grill for 2–3 minutes per side until lightly charred.

  • Arrange Salad: Place greens on a plate. Add grilled nectarines, torn prosciutto, and burrata (torn open).

  • Finish: Drizzle with balsamic glaze, season with salt and pepper, and top with fresh basil if desired. Serve immediately.

Notes

  • Swap nectarines for peaches or figs if preferred.

  • Burrata can be replaced with fresh mozzarella.
