Grilled Salsa Verde Pepper Jack Chicken is a zesty and flavorful dish that combines the smokiness of grilled chicken with the bright flavors of salsa verde and the creamy spiciness of pepper Jack cheese. Perfect for summer barbecues or a weeknight dinner!
Ingredients
1 ½ pounds thin-sliced boneless skinless chicken breasts (about 4 breasts)
12 ounces salsa verde (Trader Joe’s recommended)
3 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon cumin
1 teaspoon salt (or more
to taste)
1 teaspoon freshly ground black pepper
4 slices pepper Jack cheese (or as desired)
Fresh cilantro
finely minced (optional
for garnishing)
Lime wedges (optional
for serving)
Instructions
- In a large bowl, combine olive oil, lime juice, cumin, salt, and black pepper to create a marinade.
- Add the chicken breasts to the marinade and toss to coat. Allow to marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes per side, or until fully cooked through.
- In the last few minutes of grilling, spoon salsa verde over each piece of chicken and top with pepper Jack cheese. Close the grill lid to melt the cheese.
- Remove from grill and garnish with fresh cilantro and serve with lime wedges, if desired.
Notes
For extra flavor, allow the chicken to marinate for longer. Adjust the amount of salsa verde and cheese based on personal preference.
