  • 500 g ground beef
  • 1/2 onion, finely chopped

  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  • Prepare the zucchini: Preheat the oven to 200°C (400°F). Cut the zucchinis in half lengthwise and scoop out the center with a spoon to create boats. Place the zucchini halves on a baking sheet.
  • Cook the ground beef: In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking for 2-3 minutes until softened. Add the ground beef and cook until browned, breaking it up with a spoon. Stir in the marinara sauce, oregano, red pepper flakes, salt, and pepper. Let it simmer for 5 minutes to combine the flavors.
  • Stuff the zucchini: Spoon the ground beef mixture into the zucchini boats, filling them evenly.
  • Bake: Top the stuffed zucchini with shredded mozzarella and grated Parmesan cheese. Bake in the oven for 15-20 minutes or until the zucchini is tender and the cheese is melted and bubbly.
  • Serve: Garnish with fresh basil or parsley and serve hot.
