1 pound ground beef (lean)
2 medium sweet potatoes, peeled and diced into ½-inch cubes
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, chopped
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Heat the oil in a large skillet over medium heat.
Add the ground beef and cook until browned, about 5-7 minutes.
Stir in the diced onion and bell pepper and cook until softened, about 3-4 minutes.
Add the minced garlic, smoked paprika, dried oregano, salt, and pepper. Cook for another minute until fragrant.
Add the diced sweet potatoes and toss together with the beef and spices.
Add about 1/4 cup of water, cover, and reduce heat to low. Cook for 15-20 minutes, stirring occasionally until the sweet potatoes are fork-tender.
Taste and adjust seasoning if necessary. Garnish with freshly chopped parsley if desired, and serve warm.
