Ingredients

Scale
  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cups diced sweet potatoes (peeled)

  • 1 medium zucchini, chopped

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • Salt and pepper, to taste

  • Optional: shredded cheese or fresh parsley for garnish

Instructions

  1. Cook sweet potatoes: In a large skillet, heat olive oil over medium heat. Add sweet potatoes and cook for 7–8 minutes, stirring occasionally.

  2. Add beef and onion: Push potatoes to the side and add ground beef and onion. Cook until beef is browned and fully cooked.

  3. Stir in zucchini and garlic: Mix everything together, then add zucchini and garlic. Cook for 5–7 more minutes until tender.

  4. Season and serve: Stir in paprika, salt, and pepper. Top with shredded cheese or parsley if desired.
