This Ground Turkey Sweet Potato Casserole combines savory turkey with creamy sweet potatoes, making a hearty, wholesome dish perfect for weeknights or gatherings.
Ingredients
1 lb ground turkey
2 large sweet potatoes, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1/2 cup bell pepper, diced
1 tsp smoked paprika
1/2 tsp ground cumin
Salt and pepper to taste
1 cup shredded cheddar cheese
1/4 cup chopped fresh parsley
2 tbsp olive oil
Instructions
1. Preheat oven to 375°F (190°C).
2. Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash lightly.
3. Heat olive oil in a large skillet over medium heat.
4. Add onion, garlic, and bell pepper; sauté until softened.
5. Add ground turkey, smoked paprika, cumin, salt, and pepper. Cook until turkey is browned and cooked through.
6. Mix turkey mixture with mashed sweet potatoes and half the cheddar cheese.
7. Transfer mixture to a greased baking dish.
8. Sprinkle remaining cheddar cheese on top.
9. Bake for 20-25 minutes until cheese melts and casserole is heated through.
10. Garnish with fresh parsley before serving.
Notes
For extra flavor, add a dash of hot sauce or red pepper flakes.
Use ground chicken or beef as alternatives.
Store leftovers covered in refrigerator for up to 3 days.
