1/2 cup vegetable oil
1/2 cup all-purpose flour
1 large onion, chopped
1 bell pepper, chopped
2 celery stalks, chopped
4 cloves fresh garlic, minced
1 pound andouille sausage, sliced
1 pound shrimp, peeled and deveined
6 cups chicken or vegetable broth
1 can (14.5 oz) diced tomatoes with green chilies
2 cups okra, sliced
2 tablespoons Cajun spice mix
2 teaspoons dried thyme
1 bay leaf
Salt and pepper to taste
Chopped parsley and green onions for garnish
Steamed white rice for serving
Instructions
In a large, heavy pot or Dutch oven, heat the vegetable oil over medium heat. Whisk in the flour slowly, stirring constantly. Cook until it becomes a rich brown color, for about 15–20 minutes.
Add in the chopped onion, bell pepper, and celery, and stir for about 5 minutes until they start to soften. Add the minced garlic and stir for another minute.
Toss in the sliced andouille sausage and cook for about 5 minutes.
Pour in the broth slowly while stirring, then add the diced tomatoes, okra, Cajun spice mix, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer uncovered for about 45 minutes.
If using shrimp, add them during the last 5 minutes of cooking.
Taste test and adjust seasonings with salt and pepper as needed. Remove the bay leaf before serving.
Serve hot over a scoop of white rice, garnished with chopped parsley and green onions.
