  • 1 cup buttermilk, room temperature
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup raspberry jam
  • 4 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • Edible fangs or teeth

  • Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract. Mix until combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.
  • Divide the batter evenly among the cupcake liners, filling them about 1/2 to 2/3 full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
  • Once baked, let the cupcakes cool in the pan for about 5 minutes before transferring them to a wire rack.
  • Once completely cool, remove a small section from the center of each cupcake and fill with raspberry jam.
  • In a mixing bowl, beat together the cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  • Use a piping bag or spatula to frost the top of each cupcake and add edible fangs.
