Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked ham, diced
  • 3 cans (15 oz each) white beans, drained & rinsed
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika (optional)
  • Salt & pepper, to taste
  • 1 bay leaf
  • 1 tbsp lemon juice (optional, for brightness)

Instructions

  • Sauté Veggies & Ham:
    • Heat olive oil in a large pot over medium heat.
    • Sauté onion, carrots, and celery until soft (about 5 minutes).
    • Stir in garlic and ham, cooking for another minute.
  • Simmer the Soup:
    • Add beans, broth, thyme, paprika, salt, pepper, and bay leaf.
    • Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  • Finish & Serve:
    • Remove bay leaf, stir in lemon juice if using, and adjust seasoning.
    • Serve hot with crusty bread or cornbread!

Notes

  • Add a pinch of red pepper flakes for heat.
  • For a creamier texture, mash some beans before serving.
