- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 cups cooked ham, diced
- 3 cans (15 oz each) white beans, drained & rinsed
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp smoked paprika (optional)
- Salt & pepper, to taste
- 1 bay leaf
- 1 tbsp lemon juice (optional, for brightness)
Instructions
- Sauté Veggies & Ham:
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until soft (about 5 minutes).
- Stir in garlic and ham, cooking for another minute.
- Simmer the Soup:
- Add beans, broth, thyme, paprika, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Finish & Serve:
- Remove bay leaf, stir in lemon juice if using, and adjust seasoning.
- Serve hot with crusty bread or cornbread!
Notes
- Add a pinch of red pepper flakes for heat.
- For a creamier texture, mash some beans before serving.
- Leftovers taste even better the next day!
