For the Chicken:

  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces

  • ½ cup buttermilk

  • ½ cup flour

  • ½ cup cornstarch

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon paprika

  • Oil for frying

For the Hot Honey Sauce:

  • ¼ cup honey

  • 12 teaspoons hot sauce (adjust to taste)

  • 1 tablespoon apple cider vinegar

For the Bowl:

  • 2 cups cooked jasmine or brown rice

  • 1 cup shredded carrots

  • 1 cup thinly sliced cucumbers

  • ¼ cup pickled red onions (optional)

  • 2 tablespoons chopped cilantro or green onions


Instructions

  • Marinate chicken in buttermilk for at least 30 minutes.

  • In a bowl, mix flour, cornstarch, salt, pepper, and paprika. Dredge chicken pieces to coat well.

  • Heat oil in a skillet and fry chicken until golden and crispy, about 3–5 minutes per side. Drain on paper towels.

  • In a saucepan, combine honey, hot sauce, and vinegar, and warm gently over low heat until blended.

  • Drizzle hot honey sauce over fried chicken.

  • Assemble bowls with rice, veggies, and hot honey chicken. Top with cilantro or green onions. Serve immediately!
