Ingredients
For the Chicken:

1 lb boneless chicken breast or thighs, cut into bite-sized pieces

½ cup buttermilk

½ cup cornstarch

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

Oil for frying
For the Hot Honey Sauce:

¼ cup honey

1–2 teaspoons hot sauce (adjust to taste)

1 tablespoon apple cider vinegar
For the Bowl:

2 cups cooked jasmine or brown rice

1 cup shredded carrots

1 cup thinly sliced cucumbers

¼ cup pickled red onions (optional)

2 tablespoons chopped cilantro or green onions
Instructions

Marinate chicken in buttermilk for at least 30 minutes.

In a bowl, mix flour, cornstarch, salt, pepper, and paprika. Dredge chicken pieces to coat well.

Heat oil in a skillet and fry chicken until golden and crispy, about 3–5 minutes per side. Drain on paper towels.

In a saucepan, combine honey, hot sauce, and vinegar, and warm gently over low heat until blended.
