Ingredients
1 tbsp extra virgin olive oil
1.5 lb boneless skinless chicken breasts
2 tsp Italian seasoning
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
2 tbsp fresh minced garlic
1 small yellow onion
finely diced
24 oz grape tomatoes
halved
1 cup chicken broth
2 tbsp chopped fresh basil
1 tsp white sugar
Parmesan cheese
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
- Add the chicken to the skillet and cook until browned on both sides, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and onion, cooking until onion is translucent.
- Stir in the halved grape tomatoes, chicken broth, basil, and sugar, and bring to a simmer.
- Return the chicken to the skillet, cover, and cook for an additional 10-15 minutes until the chicken is cooked through.
- Serve topped with Parmesan cheese.
Notes
