Ingredients

1.5 lb boneless skinless chicken breasts

2 tsp Italian seasoning

1 tsp garlic powder

½ tsp salt

¼ tsp black pepper

2 tbsp fresh minced garlic

1 small yellow onion

finely diced

24 oz grape tomatoes

halved

1 cup chicken broth

2 tbsp chopped fresh basil

1 tsp white sugar

Parmesan cheese


Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
  • Add the chicken to the skillet and cook until browned on both sides, about 6-7 minutes per side.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add garlic and onion, cooking until onion is translucent.
  • Stir in the halved grape tomatoes, chicken broth, basil, and sugar, and bring to a simmer.
  • Return the chicken to the skillet, cover, and cook for an additional 10-15 minutes until the chicken is cooked through.
  • Serve topped with Parmesan cheese.

Notes

For added flavor, let the dish simmer a bit longer to meld the flavors together. Serve with a side salad for a complete meal.
