2 cups cooked brown rice
2 cups cooked and shredded chicken
1 cup broccoli florets
1 cup diced carrots
1 cup frozen peas
1 can (10.5 oz) cream of mushroom soup
1 cup low-sodium chicken broth
1 cup shredded low-fat cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil
Preheat your oven to 350°F (175°C).
Grease a 9×13 inch baking dish with olive oil.
In a large mixing bowl, combine the cooked brown rice, shredded chicken, broccoli, carrots, peas, cream of mushroom soup, and chicken broth.
Sprinkle in the garlic powder, onion powder, paprika, salt, and pepper. Mix everything until well combined.
Fold in ½ cup of the shredded cheese and save the other half for topping later.
