2 cups cooked brown rice
1 lb boneless, skinless chicken breasts, diced
2 medium sweet potatoes, peeled and diced into 1-inch cubes
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper, to taste
1 teaspoon cumin (optional)
1 cup broccoli florets
Fresh cilantro or parsley, for garnish
Instructions
Preheat your oven to 425°F (220°C).
Toss the diced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, salt, and pepper, then spread on a baking sheet.
Roast the sweet potatoes for about 25-30 minutes, or until tender and crispy, tossing halfway through.
While the sweet potatoes roast, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced chicken, salt, pepper, and cumin if using. Cook for about 7-10 minutes until cooked through.
Add broccoli florets to the chicken for the last 3-4 minutes of cooking.
To serve, place brown rice in a bowl, top with chicken and broccoli mixture, then add the roasted sweet potatoes.
Garnish with fresh cilantro or parsley and enjoy.
