1.5 pounds fresh green beans, trimmed and cut into 1-inch pieces
3 tablespoons olive oil
1 medium onion, finely chopped
2 cloves fresh garlic, minced
8 ounces mushrooms, sliced
1 cup low-sodium vegetable broth
¾ cup unsweetened almond milk
2 tablespoons cornstarch
1 teaspoon soy sauce or tamari
½ teaspoon black pepper
1 cup whole wheat breadcrumbs

Instructions
Bring a large pot of salted water to a boil. Add the green beans and blanch for about 4 minutes until they’re bright green but still crisp. Transfer to an ice bath to stop cooking, drain, and set aside.
In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until soft, about 5 minutes. Stir in garlic and mushrooms and cook until mushrooms are browned, about 5 more minutes.
In a bowl, combine vegetable broth, almond milk, cornstarch, soy sauce, and black pepper. Whisk until smooth.
Pour the sauce over the sautéed vegetables. Mix in the blanched green beans gently.
In a small bowl, combine breadcrumbs and a drizzle of olive oil. Toss until coated.
Preheat oven to 350°F (175°C). Spoon the green bean mixture into a greased 9×13-inch baking dish. Sprinkle breadcrumb mixture on top and bake for 25-30 minutes until the topping is golden.
