  • 2 cloves fresh garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup low-sodium vegetable broth
  • ¾ cup unsweetened almond milk
  • 2 tablespoons cornstarch
  • 1 teaspoon soy sauce or tamari
  • ½ teaspoon black pepper
  • 1 cup whole wheat breadcrumbs
  • Salt, to taste

  • Instructions

  • Bring a large pot of salted water to a boil. Add the green beans and blanch for about 4 minutes until they’re bright green but still crisp. Transfer to an ice bath to stop cooking, drain, and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until soft, about 5 minutes. Stir in garlic and mushrooms and cook until mushrooms are browned, about 5 more minutes.
  • In a bowl, combine vegetable broth, almond milk, cornstarch, soy sauce, and black pepper. Whisk until smooth.
  • Pour the sauce over the sautéed vegetables. Mix in the blanched green beans gently.
  • In a small bowl, combine breadcrumbs and a drizzle of olive oil. Toss until coated.
  • Preheat oven to 350°F (175°C). Spoon the green bean mixture into a greased 9×13-inch baking dish. Sprinkle breadcrumb mixture on top and bake for 25-30 minutes until the topping is golden.
