  • 2 cups cooked grains
  • 1 can (15 oz) of diced tomatoes, drained
  • 1 can (15 oz) of white beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 ½ cups shredded cheese
  • Fresh herbs for garnish, optional

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.
  • Stir in the diced seasonal vegetables and cook for about 5-7 minutes until slightly tender.
  • Add cooked grains, drained diced tomatoes, and white beans. Season with dried thyme, oregano, salt, and pepper.
  • Transfer the mixture into a greased 9×13 inch baking dish.
  • Top with shredded cheese.
  • Bake in the preheated oven for about 25-30 minutes until the cheese is bubbly and golden.
  • Let the casserole rest for about 10 minutes before serving.
