2 cups diced seasonal vegetables
1 cup chopped onions
3 cloves of fresh garlic, minced
2 cups cooked grains
1 can (15 oz) of diced tomatoes, drained
1 can (15 oz) of white beans, rinsed and drained
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
1 ½ cups shredded cheese
Fresh herbs for garnish, optional
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.
Stir in the diced seasonal vegetables and cook for about 5-7 minutes until slightly tender.
Add cooked grains, drained diced tomatoes, and white beans. Season with dried thyme, oregano, salt, and pepper.
Transfer the mixture into a greased 9×13 inch baking dish.
Top with shredded cheese.
Bake in the preheated oven for about 25-30 minutes until the cheese is bubbly and golden.
Let the casserole rest for about 10 minutes before serving.
