Ingredients
1 lb boneless
skinless chicken breasts (or thighs)
1 can (15 oz) black beans
drained and rinsed
1 can (15 oz) corn
drained
1 can (14.5 oz) diced tomatoes (with green chilies for extra flavor)
1 onion
diced
2 cloves garlic
minced
4 cups chicken broth
2 tbsp taco seasoning (store-bought or homemade)
salt and pepper to taste
shredded cheese (cheddar or Mexican blend)
sour cream or Greek yogurt
chopped fresh cilantro
sliced jalapeños
crushed tortilla chips
Instructions
- In a large pot, heat a little oil over medium heat and add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the chicken breasts, black beans, corn, diced tomatoes, chicken broth, taco seasoning, salt, and pepper to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot, shred it using two forks, and return it to the soup. Stir to combine and heat through.
- Serve hot, topped with shredded cheese, sour cream or Greek yogurt, chopped cilantro, sliced jalapeños, and crushed tortilla chips.
