This Hearty Ground Beef & Potato Hobo Casserole is a comforting one-dish meal layered with savory beef, tender potatoes, and cheesy goodness that will satisfy the whole family.
Ingredients
1 pound ground beef
4 large potatoes sliced thinly
1 onion chopped
2 cloves garlic minced
1 cup shredded cheese
1 can cream of mushroom soup or cream of celery
salt and pepper to taste
1 teaspoon paprika
olive oil or cooking spray
fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the beef; sauté until the onion is translucent.
- In a greased baking dish, layer half of the sliced potatoes evenly.
- Spread the beef mixture over the potatoes, then layer the remaining potato slices on top.
- In a bowl, combine the cream of mushroom soup, salt, pepper, and paprika if using. Pour this mixture over the casserole.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle shredded cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
Feel free to customize by adding your favorite vegetables to the layers. This dish can also be refrigerated and reheated for leftovers.
