  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds (optional)
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 jar (16 oz) sauerkraut, rinsed and drained
  • 2 cups chicken broth, low-sodium
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  • Add the pork cubes in batches and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté the chopped onion for about 3-4 minutes until translucent.
  • Stir in minced garlic, paprika, caraway seeds, and black pepper. Cook for about 1 minute until aromatic.
  • Return seared pork to the pot along with diced tomatoes (with juice), sauerkraut, and chicken broth. Season with salt to taste.
  • Bring to a gentle simmer. Reduce heat to low, cover pot, and let it simmer for about 1.5 to 2 hours.
  • After simmering, taste and adjust seasoning if needed.
  • Ladle the goulash into bowls, garnish with fresh parsley, and serve.
