2 lbs pork shoulder, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 tablespoons sweet paprika
1 teaspoon caraway seeds (optional)
1/2 teaspoon black pepper
1 can (15 oz) diced tomatoes, undrained
1 jar (16 oz) sauerkraut, rinsed and drained
2 cups chicken broth, low-sodium
Salt to taste
Fresh parsley, chopped (for garnish)
Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the pork cubes in batches and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
In the same pot, sauté the chopped onion for about 3-4 minutes until translucent.
Stir in minced garlic, paprika, caraway seeds, and black pepper. Cook for about 1 minute until aromatic.
Return seared pork to the pot along with diced tomatoes (with juice), sauerkraut, and chicken broth. Season with salt to taste.
Bring to a gentle simmer. Reduce heat to low, cover pot, and let it simmer for about 1.5 to 2 hours.
After simmering, taste and adjust seasoning if needed.
Ladle the goulash into bowls, garnish with fresh parsley, and serve.
