  • 1 can (14 ounces) of diced tomatoes, undrained
  • 1 cup of chicken or beef broth
  • 1 pound of sauerkraut, drained and rinsed
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

  • Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  • Season the pork cubes with salt and pepper. Sear them in batches for about 3-4 minutes per side until golden brown. Remove from the pot and set aside.
  • In the same pot, cook the chopped onion for about 5-7 minutes until softened and golden. Then add the minced garlic and sauté for another minute.
  • Add the sweet paprika and caraway seeds, stirring for about 30 seconds.
  • Return the seared pork to the pot and add the diced tomatoes and broth, stirring to combine.
  • Gently fold in the sauerkraut and let it mingle with the other ingredients.
  • Bring the mixture to a gentle boil, reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours, stirring occasionally.
