Ingredients
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp ground cinnamon
½ cup granulated sugar
¼ cup brown sugar packed
½ cup unsalted butter softened
2 large eggs
½ cup buttermilk or ½ cup milk + 1 tsp lemon juice
1 tsp vanilla extract
¼ cup granulated sugar for topping
1 tsp ground cinnamon for topping
2 tbsp unsalted butter melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
- In another large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the buttermilk and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour half the batter into the prepared loaf pan and sprinkle with half of the cinnamon sugar topping (granulated sugar and ground cinnamon combined).
- Add the remaining batter and top it with the rest of the cinnamon sugar mixture.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
