Ingredients

  • 4 bone-in, skin-on chicken thighs

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt and pepper, to taste

  • 3 cloves garlic, minced

  • ½ cup dry white wine

  • ½ cup chicken broth

  • ¾ cup heavy cream

  • Fresh parsley (for garnish)


Instructions

  • Season & Sear: Season chicken with herbs, salt, and pepper. Sear in oil and butter until golden.

  • Roast: Transfer to oven and roast at 200°C (400°F) for 25–30 minutes until cooked through.

  • Make Sauce: In the same pan, sauté garlic, deglaze with wine, add broth, simmer. Stir in cream.

  • Combine: Return chicken to pan, spoon sauce over, and simmer 5 minutes. Garnish and serve.

  • Use a dry white wine like Sauvignon Blanc or Chardonnay.

  • Add mushrooms or shallots to the sauce for extra depth.
