Ingredients
For the chicken:
-
4 bone-in, skin-on chicken thighs
-
1 tbsp olive oil
-
1 tsp dried thyme
-
1 tsp dried rosemary
-
Salt & pepper, to taste
For the sauce:
-
2 tbsp unsalted butter
-
3 cloves garlic, minced
-
1/2 cup dry white wine
-
1/2 cup chicken broth
-
1/2 cup heavy cream
-
1/4 cup grated Parmesan cheese
-
Fresh parsley, chopped (for garnish)
Instructions
-
Preheat oven to 400°F (200°C).
-
Season chicken with salt, pepper, thyme, and rosemary.
-
Sear chicken: In an oven-safe skillet, heat olive oil over medium heat. Sear chicken thighs skin-side down until golden (about 5–6 minutes), flip and cook another 2–3 minutes.
-
Roast: Transfer skillet to oven and roast for 20 minutes until chicken is fully cooked. Remove and set aside.
-
Make the sauce: In the same skillet, melt butter and sauté garlic. Pour in wine and let it reduce by half. Add chicken broth and simmer for 2 minutes. Stir in cream and Parmesan. Simmer until thickened.
-
Combine: Return chicken to skillet, spoon sauce over the top, and simmer for 5 more minutes.
-
Garnish with parsley and serve hot.
Notes
-
Swap white wine for extra broth if preferred alcohol-free.
-
Best served with mashed potatoes, rice, or crusty bread to soak up that delicious sauce.
-
Add mushrooms or spinach for an extra layer of flavor.
