For the chicken:

  • 4 bone-in, skin-on chicken thighs

  • 1 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt & pepper, to taste

For the sauce:

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1/2 cup dry white wine

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Season chicken with salt, pepper, thyme, and rosemary.

  3. Sear chicken: In an oven-safe skillet, heat olive oil over medium heat. Sear chicken thighs skin-side down until golden (about 5–6 minutes), flip and cook another 2–3 minutes.

  4. Roast: Transfer skillet to oven and roast for 20 minutes until chicken is fully cooked. Remove and set aside.

  5. Make the sauce: In the same skillet, melt butter and sauté garlic. Pour in wine and let it reduce by half. Add chicken broth and simmer for 2 minutes. Stir in cream and Parmesan. Simmer until thickened.

  6. Combine: Return chicken to skillet, spoon sauce over the top, and simmer for 5 more minutes.

  7. Garnish with parsley and serve hot.

  • Swap white wine for extra broth if preferred alcohol-free.
