4 boneless, skinless chicken breasts
1 cup ricotta cheese
½ cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 clove garlic, minced
Salt and pepper to taste
1 tablespoon olive oil
½ teaspoon paprika
1 cup marinara sauce
Instructions
Preheat your oven to 375°F (190°C).
Place your chicken breasts between two sheets of plastic wrap or parchment paper. Pound them gently until they’re about ¼ inch thick.
In a medium bowl, mix together the ricotta cheese, grated Parmesan, parsley, basil, garlic, and a pinch of salt and pepper.
Take a generous spoonful of the ricotta mixture and spread it over the chicken breast, leaving a little edge.
Starting from the narrow end, roll the chicken up tightly but gently. Secure with toothpicks or kitchen twine.
Drizzle olive oil over the top, then sprinkle with paprika, salt, and pepper.
Place the rolls seam-side down in a baking dish and pour the marinara sauce over the top. Bake for 25-30 minutes, or until the chicken is cooked through.
