1 lb of boneless, skinless chicken breasts, cooked and shredded
2 cups of fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1 can (14 oz) of artichoke hearts, drained and chopped
1 cup of plain Greek yogurt
1 cup of shredded cheddar cheese
½ cup of cream cheese, softened
3 cloves of garlic, minced
1 tablespoon of lemon juice
Salt and pepper, to taste
1 teaspoon of paprika
1 teaspoon of Italian seasoning (optional)
½ cup of breadcrumbs
Instructions
Preheat your oven to 350°F (175°C).
Cook and shred your chicken.
In a large skillet, add a drizzle of olive oil and sauté the chopped spinach until wilted.
In a large mixing bowl, combine Greek yogurt, cream cheese, garlic, lemon juice, salt, pepper, paprika, and Italian seasoning until smooth.
Fold in the cooked chicken, sautéed spinach, and chopped artichokes.
Pour the mixture into a lightly greased 9×13 inch baking dish.
Sprinkle shredded cheddar cheese and breadcrumbs on top.
Bake for about 25-30 minutes, until bubbly and golden brown.
