1 medium onion, diced
1 cup bell peppers, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, drained
1 can (15 oz) kidney beans, drained and rinsed
1 cup corn (frozen, fresh, or canned)
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
2 cups cooked rice
1 cup shredded cheese
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
Add the diced onion, chopped bell peppers, and minced garlic. Sauté until the onions are translucent and the peppers start to soften, about 3-5 minutes.
Stir in the drained diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper. Mix well and simmer for about 5 minutes.
