1 pound ground beef (choose lean for less grease)
4 medium potatoes, sliced thin
2 cups mixed vegetables (like corn, peas, and carrots)
1 onion, diced
1 can cream of mushroom soup
1 cup shredded cheddar cheese
1 teaspoon garlic powder
Salt and pepper to taste
Optional: paprika or chili powder
Preheat your oven to 350°F (175°C).
In a skillet over medium heat, add your ground beef and onion. Cook until browned, about 5-7 minutes. Drain excess fat.
Add garlic powder, salt, and pepper; stir well.
In a greased 9×13 inch casserole dish, layer half of the sliced potatoes, then half of the beef mixture, and 1 cup mixed vegetables. Repeat layering.
