1 ½ cups of graham cracker crumbs (about 12 full sheets)
1 cup of mini marshmallows
1 cup of chocolate chips (milk chocolate or semi-sweet)
⅓ cup of unsalted butter, melted
1 tsp of vanilla extract
1 tablespoon of sugar
Wooden popsicle sticks (or lollipop sticks)
Optional: sprinkles or crushed nuts for decorating
Prepare your workspace by lining a baking sheet with parchment paper.
In a large mixing bowl, combine graham cracker crumbs, melted butter, sugar, and vanilla extract. Mix until it resembles wet sand.
Press about a tablespoon of the mixture into the bottom of each popsicle mold to create the base.
Place a mini marshmallow (or two) on top of the base and press them down.
Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth, then pour over the marshmallows.
Sprinkle more graham cracker mixture on top of the chocolate and press down.
Insert popsicle sticks into the center of each mold.
Freeze the tray for at least 2 hours, until set.
