Ingredients
Scale
1 lb ground beef
1 medium onion, diced
2 cloves of garlic, minced
3 cups beef broth
2 cups peeled and diced potatoes
1 cup shredded cheddar cheese
1 cup milk
1 cup diced tomatoes
1 teaspoon Worcestershire sauce
1 teaspoon mustard
Salt and pepper to taste
Optional toppings: crumbled bacon, chopped green onions, more shredded cheese, or pickles
Instructions
In a large pot over medium heat, brown the ground beef, breaking it up with a spatula until it’s fully cooked and no longer pink. Drain excess fat if necessary.
Add the diced onion and cook until it's soft and translucent, about 5 minutes.
Stir in the minced garlic and let it cook for another minute.
Pour in the beef broth, then add the diced potatoes, canned tomatoes, Worcestershire sauce, and mustard. Stir everything together.
Bring the mixture to a simmer and reduce the heat to low. Cover and let it cook for about 15-20 minutes, or until the potatoes are tender.
Once the potatoes are ready, stir in the milk and shredded cheddar cheese. Mix until the cheese is melted and creamy.
Season with salt and pepper to taste.
Serve hot, and top with your favorite goodies.
