These Homemade Copycat Nutter Butters are deliciously creamy, peanut buttery cookies filled with a rich peanut butter filling, reminiscent of the classic favorite.
Ingredients
1/2 cup unsalted butter
softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar (plus extra for topping)
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup creamy peanut butter (for filling)
1/4 cup unsalted butter
softened (for filling)
1 cup powdered sugar
1 teaspoon vanilla extract (for filling)
1–2 tablespoons milk (as needed for texture)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each dough ball with a fork to create a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the filling, beat together the creamy peanut butter, softened unsalted butter, powdered sugar, and vanilla extract in a bowl.
- Add milk as needed to achieve a spreadable texture.
- Once the cookies are cool, spread a generous amount of the filling on the flat side of half the cookies, then top with the remaining cookies.
- Sprinkle some granulated sugar on top of the filled cookies before serving, if desired.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week.
