2 cups of fruit juice of your choice
2 cups of granulated sugar
3 tablespoons of unflavored gelatin
½ cup of corn syrup
1 tablespoon of fresh lemon juice
1 cup of granulated sugar for coating
Optional: Food coloring
Optional: Citric acid
In a medium saucepan, combine the fruit juice, corn syrup, and lemon juice. Heat it over medium heat until it’s just simmering.
In a separate bowl, sprinkle the gelatin over ½ cup of cold water. Let it bloom for about 5 minutes until it’s thick and goopy.
Once the juice mixture is warm, stir in the bloomed gelatin until it’s completely dissolved.
If you want colorful gumdrops, add a few drops of food coloring and stir until combined.
Gradually add the granulated sugar to the gelatin and juice mixture, stirring well until everything is thoroughly combined.
Pour the mixture into a greased 8×8-inch baking dish or silicone molds. Let it sit at room temperature for about 4-6 hours, or until it’s fully set.
Once set, dust a cutting board with sugar. Remove the gumdrop slab from the dish and cut it into squares or use cookie cutters.
Coat each piece in sugar, and let them dry for a couple of hours to firm up the sugar coating.
