Ingredients

  • 2 pounds of boneless lamb shoulder or chicken thighs
  • 4 cloves of fresh garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 cup Greek yogurt
  • 1 cucumber, grated and excess water squeezed out
  • 1 clove of garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped
  • 46 pita breads
  • Fresh tomatoes, diced
  • Red onion, thinly sliced
  • Fresh lettuce or arugula

  • Instructions

  • In a large bowl, combine the minced garlic, oregano, cumin, smoked paprika, salt, pepper, olive oil, and lemon juice. Add the lamb or chicken and coat it well with the spices. Cover and let marinate in the fridge for at least an hour.
  • While the meat is marinating, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, and dill in a bowl. Season with salt and pepper and refrigerate.
  • Preheat the grill or skillet over medium-high heat. Cook the meat for about 5-7 minutes per side for chicken or 8-10 minutes per side for lamb until charred and cooked.
  • Let the cooked meat rest for a few minutes and then slice it thinly against the grain.
  • Warm the pita bread on the grill or in a dry skillet until pliable.
  • Assemble the gyros with sliced meat, tzatziki, and your choice of toppings, then roll and serve.
