1 cup of almond milk
1/4 cup of chia seeds
2 tablespoons of maple syrup or honey
1 teaspoon of pure vanilla extract
1 ripe mango, peeled and diced (about 1 cup)
Fresh mint leaves for garnish (optional)
In a medium bowl, combine the almond milk, chia seeds, maple syrup (or honey), and vanilla extract. Whisk everything together until it's well mixed.
Allow the mixture to sit for about 5 minutes, giving it a good stir to break up any seed clumps.
Cover the bowl and pop it into the fridge for at least 2 hours, or overnight if you prefer to meal prep.
Chop up your ripe mango.
