3 pounds of baby potatoes (Yukon gold or red potatoes)
1/3 cup of olive oil
4 cloves of garlic, minced
2 teaspoons of dried oregano
2 teaspoons of dried rosemary, crushed
Salt to taste
Pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 425°F (220°C).
Wash and dry the baby potatoes thoroughly, leaving them whole or cutting them in halves or quarters if larger.
In a large bowl, toss the potatoes with olive oil, minced garlic, oregano, crushed rosemary, salt, and pepper until evenly coated.
Line a large baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
Place the baking sheet in the preheated oven and roast for about 30-40 minutes, shaking them halfway through.
Check for doneness; the potatoes should be golden brown and tender inside.
Remove from the oven, sprinkle with fresh parsley if desired, and serve hot.
