  • 1 tablespoon of baking soda (for boiling water)
  • Toppings: sesame seeds, poppy seeds, everything bagel seasoning, or coarse sea salt

  • Instructions

  • In a large mixing bowl, combine your bubbly sourdough starter and lukewarm water. Then, add the sugar and stir to combine. Gradually mix in the bread flour and salt to create a shaggy dough.
  • Transfer the dough onto a clean, floured surface and knead for about 8-10 minutes until smooth and elastic.
  • Place your kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise for about 2-3 hours, or until it doubles in size.
  • Once risen, gently punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, poke your thumb through the middle to create a hole, and stretch it to about 2-3 inches wide.
  • Bring a large pot of water to a boil, adding the baking soda. Drop the bagels in batches and boil for about 30 seconds on each side.
  • Preheat your oven to 425°F (220°C). Brush the boiled bagels with water or egg wash and sprinkle on toppings.
  • Bake the bagels for about 20-25 minutes until golden brown.
  • Let the bagels cool for a few minutes before slicing.
