1 pound fresh green beans (trimmed)
1 pound baby carrots (or regular carrots cut into sticks)
3 tablespoons unsalted butter
3 tablespoons honey (local and raw is best for flavor)
Salt and pepper to taste
1 teaspoon fresh thyme leaves (optional)
1 tablespoon lemon juice
Instructions
Start by washing and trimming your green beans and carrots.
In a large pot of salted boiling water, add your green beans and carrots. Blanch them for 3–5 minutes until they are tender but still crisp. Drain and plunge them into a bowl of ice water.
In a large skillet over medium heat, melt the butter and stir in the honey. Let it simmer until slightly thickened.
Drain the green beans and carrots from the ice bath and add them to the skillet. Toss together in the honey glaze and season with salt, pepper, and thyme if using. Cook for an additional 2–3 minutes.
Drizzle in the lemon juice, stir, and serve hot. Optionally garnish with extra thyme.
