8 oz elbow macaroni
1 lb boneless, skinless chicken breasts, diced
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon smoked paprika
1 tablespoon honey
2 cups shredded sharp cheddar cheese
1 cup cream cheese, softened
2 cups milk (whole or 2% works best)
½ cup grated Parmesan cheese
3 cloves garlic, minced
¼ cup chopped green onions or chives, for garnish
Instructions
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
In the same pot, heat olive oil over medium heat. Add the diced chicken, salt, pepper, and smoked paprika. Cook until the chicken is browned and cooked through, about 6-7 minutes.
Once the chicken is cooked, add the minced garlic to the pot. Sauté for about 1-2 minutes until fragrant.
Reduce the heat to low, and stir in the cream cheese, milk, and honey. Mix well until melted and creamy. Stir in the shredded cheddar and Parmesan until fully melted.
Add the cooked macaroni into the cheese sauce, stirring until all the pasta is coated.
Taste and adjust seasoning if needed.
Spoon the mac and cheese into bowls and garnish with chopped green onions or chives.
