  • Author: amelia

  • Yield: 1 loaf (about 10 slices) 1x

Description

A Sweet-Nutty Take on Classic Quick Bread

This no-yeast soda bread gets a delightful upgrade with the earthy crunch of sesame seeds and a touch of honeyed sweetness. Perfect with butter, cheese, or served alongside soups and stews.

Ingredients

Scale
  • 3½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 tbsp sesame seeds (plus more for topping)

  • 2 tbsp honey

  • 1½ cups buttermilk

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet or line with parchment paper.

  2. In a large bowl, mix flour, baking soda, salt, and sesame seeds.

  3. In a small bowl, whisk buttermilk and honey until combined.

  4. Pour wet ingredients into dry ingredients. Mix until just combined (don’t overwork).

  5. Shape into a round loaf and place on baking sheet. Slash an “X” on top and sprinkle with extra sesame seeds.

  6. Bake for 30–35 minutes or until golden and sounds hollow when tapped on the bottom.

  7. Cool on a wire rack before slicing.

Notes

  • No buttermilk? Mix 1½ cups milk with 1 tbsp vinegar or lemon juice—let sit 5 minutes.

  • For a nuttier flavor, toast the sesame seeds before adding.

  • Delicious warm with butter and a drizzle of extra honey!
