Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken thighs or breasts

  • 1/2 cup all-purpose flour

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • Salt & pepper, to taste

  • 2 tbsp olive oil (for frying)

For the Hot Honey Sauce:

  • 1/4 cup honey

  • 1 tbsp hot sauce (adjust to taste)

  • 1 tbsp soy sauce

  • 1 tsp red pepper flakes (optional, for extra heat)

For the Bowls:

  • 2 cups cooked rice (white, brown, or cauliflower rice)

  • 1 cup roasted or steamed veggies (e.g., broccoli, carrots, bell peppers)

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (optional)

Instructions

  1. Prepare the Chicken: In a shallow bowl, mix flour, paprika, garlic powder, salt, and pepper. Dredge chicken in the flour mixture until well-coated.

  2. Fry the Chicken: Heat olive oil in a skillet over medium heat. Fry the chicken for 4-5 minutes per side until golden and crispy. Remove from the pan and set aside.

  3. Make the Hot Honey Sauce: In the same skillet, add honey, hot sauce, soy sauce, and red pepper flakes. Stir well and simmer for 2-3 minutes until the sauce thickens slightly.

  4. Coat the Chicken: Return the chicken to the skillet and toss it in the hot honey sauce until fully coated.

  5. Assemble the Bowls: Serve the honey-coated chicken over a bed of rice, adding your choice of veggies on the side. Drizzle with extra sauce, garnish with cilantro, and serve with lime wedges if desired.

Notes

  • Adjust the level of heat by using more or less hot sauce.

  • Add pickled onions or avocado for extra flavor and texture.

  • For a lower-carb option, serve the chicken over cauliflower rice.
